Foam the egg whites with the lemon juice in a dry bowl for 3 minutes.
Add the granulated sugar gradually and beat for 4 minutes, until glossy peaks form.
Lightly thicken the Zile grape molasses in a small pot for 8 minutes, but do not leave it boiling hot.
Pour the warm molasses into the egg whites in a thin ribbon while continuing to beat.
Beat the foam halva for 3 more minutes; it should be light brown and airy.
Coarsely chop the walnut kernels with a knife.
Spoon the halva into bowls and serve with walnut kernels and cinnamon.
💡 Tip: Keep the egg-white bowl completely dry; even one drop of water or fat makes it harder for the foam to hold.
🍽️ Serving suggestion: Serve the foam halva in small bowls, sprinkled with walnuts and paired with plain Turkish coffee.
