Peel the eggplants in stripes, slit them lengthwise, and soak them in salted water for 15 to 20 minutes.
Pat the eggplants dry, then soften them in a pan or in a 200°C oven for 20 minutes.
Saute the onion, add the ground beef, and when its liquid evaporates, add the tomatoes, pepper paste, and garlic.
Cook the filling for 8 to 10 minutes, then balance it with salt and black pepper.
Open the slits in the eggplants, fill them with the ground beef mixture, and place the long green peppers on top.
