Peel the taro root, cut it into large pieces, and boil in salted water for 28 minutes, until soft.
Cook the beef cubes with onion, garlic, salt, and black pepper for 30 minutes.
Mash the boiled taro into a smooth puree.
Strain the meat broth and set the beef pieces aside.
Cook the palm oil, meat broth, turmeric, and baking soda in a pot for 8 minutes, until it becomes a glossy yellow sauce.
Return the beef to the sauce and simmer over low heat for 6 minutes.
Place the taro puree on a plate, spoon the achu soup over it, and serve.
💡 Tip: Using a little baking soda and turmeric instead of traditional canwa is easier at home; do not increase the amount or the soup can taste soapy.
