Roll out the flour dough and prepare small manti filled with the beef mixture.
Saute the tomato paste in the pot for 2 minutes to remove its raw smell.
Add hot water and the cooked chickpeas, then boil for 5 minutes.
Add the manti to the soup and cook over medium heat for 15 minutes.
When the manti float to the surface, rest the soup for 3 minutes before serving so the filling settles.
Do not crush the manti while ladling into bowls, or the dough will open in the broth.
