Place the ekmek kadayifi in a tray and swell it with hot water for 20 minutes.
Drain the excess water without pressing it down.
Melt the sugar in a pot until it turns light caramel.
Carefully add the water and boil the syrup for 15 minutes.
Drizzle the syrup over the kadayif and let it absorb over low heat for 30 minutes.
Rest the dessert at room temperature for 1 hour.
Slice and serve with kaymak.
