Leave the lamb in large cubes and cut the onions, tomatoes, and green peppers into thick pieces.
Put the tail fat or olive oil and the butter on the bottom of the clay pot.
Layer the lamb, onions, garlic, peppers, and tomatoes in the pot.
Loosen the tomato paste with hot water, mix with thyme, black pepper, and salt, and pour it down the side of the pot.
Cover the pot and place it in a cold oven.
Set the oven to 180°C and cook the stew for 2 hours 15 minutes, until the meat is tender.
Uncover and cook for 15 more minutes to concentrate the sauce.
Rest the stew for 10 minutes so the juices return into the dish.
Serve hot with rice pilaf and yogurt.
