Wrap the tofu in paper towels and drain for 15 minutes.
Warm the kombu dashi, soy sauce, and apple juice in a small pot for 3 minutes.
Grate the daikon and ginger and finely chop the spring onion.
Cut the tofu into 6 pieces and coat each piece in potato starch.
Heat the oil to 165°C.
Fry the tofu pieces in batches for 2 minutes until light golden.
Place the fried tofu in bowls, pour the warm sauce over, and serve with the garnishes.
💡 Tip: Coating the tofu in starch right before frying keeps the outer crust from peeling off in the pan.
