Mix the slaked lime with water and let it stand until the sediment settles, then carefully take the clear liquid.
Peel the eggplants, leaving the stem ends short, and soak them in the clear limewater for 3 hours.
Rinse the eggplants several times in plenty of water, boil for 10 minutes, and drain.
Boil the sugar and water in a pot for 12 minutes to make the syrup.
Add the eggplants, cloves, and cinnamon to the syrup.
Cook the jam for 35 minutes, until glossy and thickened.
Add the lemon juice and boil for 5 more minutes.
Fill jars while hot and seal them.
💡 Tip: Use only the clear part of the limewater; sediment leaves unwanted odor and grit in the jam.
🍽️ Serving suggestion: Serve with coffee on a small plate, topped with a few cloves and fine lemon zest.
