Score the plantain skins lengthwise, peel them, and place them in a wide bowl so you can work before they darken.
Grate the plantains coarsely and gently squeeze out excess moisture with a clean cloth.
Crush the garlic, finely chop the cilantro, and mix both with the grated plantain.
Add the lime juice, salt, and black pepper and rest the mixture for 5 minutes so the starch binds the shreds.
Heat the oil to 175?C, take small handfuls of the mixture, and drop them into the oil as loose rounds.
