Wash the two rices together, soak in water for 20 minutes, and drain.
Soften the onion and garlic in vegetable oil.
Add the chicken and spiced beef sausage and saute for 8 minutes.
Add the tomato paste, turmeric, fish sauce, coconut milk, and chicken stock.
Add the rices to the pot and cook over low heat for 22 minutes.
Add the pepper and peas, then steam for 8 more minutes.
Rest the pilaf for 5 minutes without stirring, then serve.
💡 Tip: Glutinous rice gives the pilaf body; if all the rice is this type, the separate-grain texture disappears.
