Slice the beef ribeye very thinly.
Mix the soy sauce, grated pear, sugar, garlic, sesame oil and sesame seeds.
Add the meat, spring onions, onion and carrot to the marinade and rest for 1 hour.
Heat a wide pan over very high heat.
Place the meat in the pan in a single layer and caramelize for 3 minutes.
Cook the remaining meat the same way, without crowding the pan.
Serve the cooked meat with rice, lettuce leaves and kimchi.
