Thinly slice the beef sirloin and chop the spring onion.
Warm the dashi stock, half of the soy sauce, and half of the apple juice in a pot for 8 minutes.
Heat oil in a separate pan and stir the beef slices for 3 minutes.
Add the remaining soy sauce, remaining apple juice, and sugar to the beef and cook 4 minutes in a glossy sauce.
Loosen the udon noodles in hot water for 2 minutes and drain.
Divide the udon among bowls and pour the hot dashi stock over them.
Serve the beef udon with the beef slices and spring onion.
