Boil the sugar and water for 12 minutes, add the lemon juice, and keep the syrup hot.
Whisk the unsalted cheese and milk until smooth.
Add the eggs, melted butter, and baking powder to the cheese mixture.
Add the flour gradually and make a soft dough that is just firm enough to shape by hand.
Pinch off walnut-size pieces of dough and place them on a greased tray.
Bake the sweets at 190°C for 25 to 28 minutes, until browned.
Pour the hot syrup over the sweets as soon as they come out of the oven.
Rest for 30 minutes, until the syrup is absorbed, then serve.
💡 Tip: Whisking the cheese with milk until smooth prevents salty or coarse bits in the dough.
