Divide the mixture into four patties and make a shallow dent in each center.
Heat a cast iron pan above 230°C.
Sear the patties for 3 minutes.
Flip the patties, add cheddar and cook for 3 more minutes.
Toast the burger buns for 1 minute.
Close the burgers with mayonnaise, lettuce, tomato, patty and pickles.
