Bring the sugar and water to a boil in a pot.
Add the semolina and finely ground walnuts.
Cook the mixture for 5 minutes, stirring constantly, until thickened.
Sprinkle powdered sugar on parchment paper and spread the hot mixture over it.
Let it cool slightly, then cut into diamond shapes before it fully cools.
Turn over and serve cut into square slices.
💡 Tip: Not boiling the syrup for too long prevents the paste from setting rock-hard as it cools.
