Boil the granulated sugar and water in a saucepan, add the lemon juice, and remove from the heat after 9 minutes when it reaches a syrup consistency.
Make a well in the flour and add the eggs, baking soda, water, and vegetable oil for the dough.
Knead the dough for 7 minutes until soft and no longer sticky.
Divide the dough into 8 balls, roll each one thin like yufka, and cut long strips.
Wrap the strips around a fork in a spiral and press the ends lightly.
Heat the frying oil to 170°C and fry the kunku in batches for 4 minutes, until pale golden.
Rest the fried pastries for 5 minutes, combine them with the warm syrup, and let them absorb it for 12 minutes.
Coarsely chop the walnuts, scatter them over the dessert, and serve.
💡 Tip: Wrap the dough strips loosely around the fork; if they are too tight, the inner curves will not fry or absorb syrup evenly.
