Slice the cabbage very finely and grate the carrot.
Whisk the mayonnaise, grape vinegar, sugar and a little salt, then mix with the cabbage and carrot.
Divide the ground beef into 4 patties and season with salt and black pepper.
Heat a cast-iron pan until very hot and cook the patties for 3 minutes per side.
Toast the burger buns on their cut sides for 1 minute.
Slice the tomato thinly and lightly drain the slaw.
Fill the buns with patty, tomato and plenty of slaw, then serve.
💡 Tip: Drain the slaw close to serving time so the bun does not soften.
