Whisk the milk, sugar, and rice flour in the pot while cold.
Cook the mixture for 12 minutes, until the rice flour smell disappears.
Finely grind half the walnuts and add them to the keskul; stir for 2 minutes so they release their oil.
Divide the keskul into bowls and let it become warm before the surface skins over.
Sprinkle the remaining walnuts on top and chill for 1 hour.
Before serving, wipe the rims of the bowls so the keskul surface looks clean.
💡 Tip: Stirring the keskul for 2 more minutes after removing it from the heat delays skin forming on top.
