Cut the potatoes into 1 cm cubes and fry them in butter over medium heat for 6 minutes.
Add the scallions and turn for 1 minute.
Spread the Civil cheese over the potatoes, and if the cheese is very salty, leave the salt until the end.
Crack in the eggs, cover, and cook for 4 minutes.
Sprinkle with black pepper and serve hot from the pan.
