Rinse 2 cups poha in a sieve and let it drain for 5 minutes.
Dice 2 potatoes small and cook them in a pan over medium heat for 8 minutes.
Add 1 teaspoon mustard seeds and let them pop for 45 seconds.
Add the peanuts and turmeric and toast for 2 minutes, making sure the spice does not burn.
Add the poha to the pan and heat gently for 4 minutes so the flakes do not crush.
Turn off the heat and rest for 2 minutes so the steam fully softens the poha.
