Leave the lamb cubes in large pieces and cut the lamb tail fat into small cubes.
Chop the tomatoes, green peppers, garlic, and onion.
Toss the meat, tail fat, vegetables, salt, black pepper, and thyme together in a wide tray.
Cover the tray with parchment paper and bake in a 200°C oven for 70 minutes.
Open the paper and spoon the juices gathered in the tray over the meat.
Lower the oven to 180°C and cook the meat for 35 more minutes, until browned and tender.
Rest the tray for 10 minutes and serve the lamb tava hot with its juices.
