Soak the cracked wheat and chickpeas overnight, then drain.
Put the wheat, chickpeas, and water in a pot and cook for 45 minutes.
Rinse the green lentils, add them to the pot, and cook for 18 minutes.
Chop the onion and soften it in half of the clarified butter for 6 minutes.
Add the onion, salt, and black pepper to the soup and cook for 8 minutes to thicken.
Warm the dried mint in the remaining clarified butter for 1 minute.
Pour the mint butter over the soup and finish with lemon.
💡 Tip: Soak the wheat and chickpeas overnight; otherwise the lentils fall apart before the wheat softens.
