Rinse the rice, cook it with water and rest for 10 minutes.
Dissolve the rice vinegar, sugar and salt and fold into the hot rice.
Score the shrimp lightly so they straighten, then coat in flour, egg and panko.
Fry the shrimp in 180°C oil for 3 minutes until crisp.
Mix the mayonnaise and sriracha into a spicy sauce.
Spread rice on nori, flip it and add shrimp, avocado and cucumber.
Roll and cut into 8 pieces with a damp knife, then serve with sesame, spicy mayonnaise and soy sauce.
