Pick the mallow leaves, wash them in plenty of water, and chop them coarsely.
Dice the onion small and soften it in olive oil for 5 minutes.
Add the rice and turn it in the oil for 2 minutes.
Add the hot water, salt, and black pepper, and cook the rice for 10 minutes until half-soft.
Add the mallow greens and cook for 7 minutes, until the leaves collapse.
Stir in the lemon juice and rest the dish for 5 minutes.
Serve the mallow saute with bulgur pilaf and optional yogurt.
💡 Tip: Do not leave the mallow greens sitting after washing; the delicate leaves wilt in water and lose their bright green color in the saute.
