Mix the warm milk, yeast, and 1 tablespoon of the sugar, then let it foam for 8 minutes.
Combine the flour, remaining sugar, egg yolks, butter, and salt with the yeasted milk and knead a soft dough.
Let the dough rise in a covered bowl for 90 minutes.
Divide the dough into 8 pieces, roll each piece into a strip, coil it, and shape it into a spiral.
Let the shaped dough rise on the tray a second time for 60 minutes.
Bake the ensaymadas in a 185°C oven for 16 to 18 minutes, until browned.
While warm, brush them with butter and serve with granulated sugar and grated kasar cheese.
💡 Tip: Let the dough rise twice; with only one rise, ensaymada will puff but stay bread-like instead of getting a cottony crumb.
🍽️ Serving suggestion: Serve ensaymada warm, topped with butter, granulated sugar, and grated kasar cheese.
