Cut the tofu into cubes and press with a clean cloth for 10 minutes to dry it.
Whisk the soy sauce, olive oil, and lime juice in a bowl.
Coat the tofu cubes with the sauce and arrange them in a single layer on a tray.
Bake in a 200°C oven for 22 minutes, turning the cubes halfway through.
Rest the tofu for 3 minutes and serve hot with lime wedges.
