Rub the lamb shanks with salt and pepper.
Heat the olive oil in a pot and seal the shanks on all sides for 8 minutes.
Chop the onion, carrot and garlic coarsely.
Turn the vegetables in the same pot for 5 minutes.
Add tomato paste and thyme and fry for 2 minutes.
Place the shanks in the baking dish, add the vegetables and hot water.
Close the container and bake in the oven at 170°C for 2 hours and 30 minutes until the meat is tender.
💡 Tip: Sealing the shanks first gives the oven water a deep meat flavor.
