Prepare the tray with parchment paper.
Boil the sugar, water, ginger, and salt in a pot.
Add the grated coconut and cook until it reaches a thick fondant consistency.
Set aside one quarter of the mixture and color it with pink food coloring.
Press the white mixture into the tray and spread the pink mixture over it in a thin layer.
Once cool, cut into rectangular pieces.
💡 Tip: Do not leave the mixture too watery; when it holds its shape as you spread it with a spoon, it is firm enough to cut.
