Whisk 4 eggs with 0.75 cup water and salt for 1 minute.
Pass the mixture through a sieve so the steamed custard is smooth.
Grease a heatproof bowl and pour the egg mixture into it.
Set the bowl in a boiling water bath, cover it, and steam for 8 minutes.
Add the scallion and cook for 4 more minutes, until the center is no longer wobbly.
