Separate the egg whites from the yolks.
Beat the whites with the salt and half the sugar until they form a firm meringue.
Bring the milk to the boiling point with the vanilla.
Spoon pieces of meringue into the milk and cook each side for 1 minute.
Whisk the egg yolks with the remaining sugar and temper them with the hot milk.
Cook the custard over low heat for 8 minutes.
Bring the remaining sugar and water to a caramel color and serve the dessert.
💡 Tip: If creme anglaise boils, the eggs curdle; remove it from the heat once it coats the back of a spoon.
