Dissolve the granulated sugar in the hot water.
Add the sweetened water gradually to the glutinous rice flour and knead into a smooth dough.
Divide the dough into 16 pieces, open each piece, and fill with red bean paste.
Lightly wet the balls, coat them in sesame seeds, and roll them in your palms so the sesame adheres.
Heat the vegetable oil to 150°C and fry the jian dui balls slowly for 6 minutes.
Raise the heat to 165°C and fry for 3 more minutes, until golden.
Transfer to paper towels and rest for 8 minutes, because the filling will be very hot.
💡 Tip: Do not overheat the oil; sesame balls can puff and burst too quickly, so starting at 150°C and frying slowly is safer.
