Divide the beef into 8 thin patties and flatten them lightly.
Make 4 small piles of cheddar cheese.
Place cheese in the center of four patties and cover with the remaining patties.
Press the edges with your fingers to seal completely.
Heat a cast iron pan above 230°C.
Cook the patties for 4 minutes per side and rest for 3 minutes.
Toast the brioche buns and serve with mayonnaise, lettuce, tomato, pickles and the stuffed patties.
