Knead the rye flour, wheat flour, warm water, half of the salt, and half of the butter into a firm dough.
Rest the dough covered for 20 minutes.
Cut the salmon and white fish into large cubes and finely chop the onion.
Mix the fish, onion, dill, black pepper, and remaining salt.
Roll the dough into an oval on a floured surface, pile the fish filling in the center, and add the remaining butter in small pieces.
Close the dough over the filling, seal the seams with water, and smooth the surface.
Bake the kalakukko at 220°C for 15 minutes to set the crust, then slow-bake at 150°C for 4 hours.
Rest for 10 minutes after baking, then cut into thick slices and serve.
💡 Tip: Seal the dough seam very well; if steam escapes during the long bake, the fish dries out and the kalakukko falls apart like bread.
