Cut the goose meat into large pieces and trim only the very thick excess fat.
Sear the meat with vegetable oil in a pot for 10 minutes, until all sides take color.
Chop the onions for cooking, add them to the pot, and turn for 6 minutes.
Add the red pepper paste, salt, black pepper, and bay leaf.
Add the hot water and cook the goose over low heat for 70 minutes.
Cut the potatoes into large pieces, add them to the pot, and cook for 25 more minutes.
Rest the stew for 10 minutes and serve hot without breaking up the meat.
💡 Tip: Do not remove all of the goose fat, a small amount builds the stew's glossy, full sauce.
