Mix the warm water, dry yeast, and 1 tablespoon granulated sugar and wait for 8 minutes.
Whisk the flour, yogurt, eggs, salt, and yeasted water into a pourable dough.
Cover the dough and let it ferment for 40 minutes.
For the syrup, boil the granulated sugar, water, and lemon juice for 9 minutes, then let it become warm.
Heat the vegetable oil to 170°C and drop small spoonfuls of dough into it.
Fry the cirik pieces for 4 minutes, until golden.
Dip the fried pieces in warm syrup for 3 minutes, drain, and transfer to a serving plate.
💡 Tip: Drain excess oil before dropping the dough pieces into syrup; hot oil forms a layer on the syrup and makes the dessert heavy.
🍽️ Serving suggestion: Serve Kastamonu cirik tatlisi in small portions with Turkish coffee and optional plain walnut pieces.
