Rinse the vine leaves until excess salt is gone, then slice them into thin strips.
Soften the sour plums in hot water for 10 minutes.
Fry the onion in olive oil for 6 minutes.
Add the tomato paste, stir for 1 minute, then add the bulgur.
Add the vine leaves, plums, salt, pepper, mint, and hot water.
Cook over low heat for 22 minutes, until the water is absorbed.
Turn off the heat, rest for 10 minutes, fluff without crushing the grains, and serve.
💡 Tip: If the vine leaves are too salty, soak them in warm water for 15 minutes before slicing.
