Dice the onion small and finely chop the parsley.
Melt the butter in a pan and cook the onion for 5 minutes, until softened.
Add the minced beef and brown it for 8 minutes, keeping it crumbly.
Add the salt, black pepper, and red pepper flakes to the pan and bloom them for 1 minute.
Make four wells in the beef and crack the eggs into them.
Cover the pan and cook for 4 minutes, until the egg whites set.
Scatter with parsley and serve the eggy beef hot from the pan.
