Pat the lamb ribs dry, rub them with half the salt and the black pepper, and let them stand at room temperature.
Cut the eggplants into thick finger-sized pieces, rub them with part of the remaining salt, and let them sit for 15 minutes.
Coarsely chop the tomatoes, green peppers, and onions, and leave the garlic cloves whole.
Sear both sides of the lamb ribs in half the olive oil for 10 minutes, until colored.
Dry the eggplants and place them on a tray, then toss with the tomatoes, green peppers, onions, and garlic.
Mix the tomato paste, pepper paste, hot water, remaining olive oil, and remaining salt, then drizzle over the vegetables.
Place the lamb ribs in the center of the tray and dot the top with small pieces of butter.
Cover the tray and bake for 100 minutes at 180°C, then uncover and brown for 18 minutes.
