Put the lamb in a pot with the water, bay leaves, and onion.
When it boils, skim the foam and cook over low heat for 35 minutes.
Add the barley and cook for another 20 minutes.
Add the potatoes, carrots, celery stalks, cabbage, thyme, salt, and black pepper.
Cook for 20 minutes, until the vegetables are tender.
Remove the meat from the bone and return it to the soup in large pieces.
