Mix the ground beef with half of the salt, half of the cumin, and half of the ground coriander.
Shape the mixture into 16 walnut-size meatballs.
Turn the meatballs in 1 tablespoon of oil for 6 minutes, until the outside takes on color.
Chop the onions and cook them in the remaining oil for 8 minutes.
Add the garlic, ginger, garam masala, remaining cumin, remaining ground coriander, and red pepper flakes and bloom for 1 minute.
Add the tomato puree and remaining salt and cook the sauce for 10 minutes.
Warm the yogurt with 3 tablespoons of hot sauce, then stir it into the pot.
Add the meatballs to the sauce, cook over low heat for 10 minutes, and serve with fresh cilantro and basmati rice.
💡 Tip: Mixing the meatball mixture for 1 minute is enough; long kneading makes the meatballs rubbery and weighs down the sauce.
🍽️ Serving suggestion: Serve kofta curry with basmati rice, cucumber yogurt, and warm lavash if desired.
