Grate the onion and squeeze out its juice, then finely chop the garlic and parsley.
Knead the beef mince, lamb mince, onion, garlic, parsley, cumin, coriander, allspice, salt, and black pepper for 6 minutes.
Rest the kofta mixture in the refrigerator for 20 minutes.
Divide the mixture into 8 pieces and press each one in a long shape around metal or soaked wooden skewers.
Oil a grill pan with olive oil and cook one side of the koftas for 7 minutes.
Turn the skewers and cook the other side for 7 minutes, then remove when fully cooked inside.
Rest the kofta kebab for 5 minutes and serve with flatbread.
