Rub the lamb with salt, cinnamon, and the spice blend, then let it stand for 15 minutes.
Brown the meat and onions in a pot for 8 minutes.
Add 400 ml hot water and close the lid.
Cook the meat over low heat for 75 minutes, adding a little hot water if the liquid reduces.
Add the apricots and almonds and cook for another 25 minutes.
Rest the tagine sauce for 5 minutes and serve with couscous or rice pilaf.
Leave the apricots on top so they do not completely dissolve in the long-cooked sauce.
💡 Tip: Add the dried apricots during the last 25 minutes; they sweeten the sauce without falling apart.
