Soak the dried apricots in warm water for 10 minutes.
Sear the lamb in olive oil for 8 minutes.
Add the onions and fry for 6 minutes, until softened.
Add a little hot water, the salt and spices.
Cook over low heat for 45 minutes, until the meat is tender.
Add the apricots and cook for 12 to 15 more minutes.
