Soak the cracked wheat and fine bulgur in hot water for 25 minutes to swell.
Soak the grape leaves in warm water to remove excess salt.
Knead the swollen grains with salt and prepare hazelnut-sized pieces of filling.
Place filling on each leaf and roll thinly like a pencil.
Cook the rolls in a pot with enough water to cover them for 28 minutes.
Boil the yogurt, flour, egg yolk, and pomegranate molasses in a separate pot for 12 minutes while stirring.
Transfer the rolls to the yogurt sauce and cook over low heat for 8 minutes.
Fry the onion in butter for 7 minutes, add red pepper flakes, and drizzle over the rolls.
💡 Tip: Boil the yogurt sauce while stirring constantly, when the flour and egg liaison stays smooth the tevenk sauce remains silky.
🍽️ Serving suggestion: Serve the tevenk rolls hot with onion and red pepper butter, plus optional pickles and a plain yogurt drink.
