Slice the onions thinly for piyaz style.
Cook the onions in butter for 12 minutes until soft and colored.
Divide the beef into four equal patties and season both sides with salt and black pepper.
Heat a cast iron pan above 230°C and sear the patties for 3 minutes.
Flip the patties, divide the blue cheese over them and cook for 3 more minutes.
Toast the burger buns cut side down in the pan for 1 minute.
