Knead the semolina, flour, salt, and water until a soft dough forms.
Oil the dough with olive oil and rest it for 30 minutes.
Saute the onions, peppers, and garlic for 6 minutes.
Add the tomatoes, red pepper flakes, and cumin, then thicken the filling for 10 minutes.
Shape the dough into oiled balls and stretch each one very thin.
Place filling in the center and fold into a square envelope.
Cook the flatbreads in a hot pan until both sides are browned.
