Wash the casings inside and out with plenty of water, rubbing with salt and lemon to clean them.
Prepare a loose filling with rice, ground meat, tomato paste, onion, and spices.
Fill the casings halfway with the mixture, leaving room so they do not burst when the rice swells.
Arrange the filled casings in a pot and add enough hot water to cover.
Cook over low heat for 55 minutes, checking the water level from time to time.
Rest the cooked mumbar for 5 minutes and serve sliced.
