Heat the oven to 170°C.
Mix the flour, chickpea flour, semolina, baking powder, cardamom, and salt.
Beat the ghee and powdered sugar until creamy.
Add the dry mixture to the fat mixture and make a soft dough that holds together.
Chill the dough for 10 minutes.
Shape small balls, place them on a tray, and press pistachios on top.
Bake the nankhatai for 20 minutes, until lightly colored.
Cool on the tray for 10 minutes and serve.
💡 Tip: Do not overbake the cookies because they seem soft when they come out of the oven; they crisp as they cool.
