Rub the beef pieces in cold water for 2 minutes, put them in a pot, and add water to cover.
Coarsely chop one onion and add it to the meat with garlic, ginger, bay leaf, and half of the salt.
Cook the meat over low heat until tender enough to pull away from the bone.
Drain the meat, reserve 1 cup of cooking liquid, and divide the bone in pieces into serving bites.
Stir the red palm oil in a small pot without heating it, loosen the baking soda with a very little hot water, and add it to the oil.
When the oil thickens, add ehuru or nutmeg, dried shrimp powder, chopped hot pepper, and the remaining salt.
Add the meat pieces and reserved cooking liquid to the sauce, then thicken over low heat for 20 minutes while turning.
Slice the remaining onion into rings, finely chop the spinach or utazi, and add them to the pot in the final 2 minutes.
Serve nkwobi hot; the sauce should stay thick and glossy on the plate.
💡 Tip: Add only a tiny amount of baking soda to the palm oil; too much makes the sauce taste soapy.
