Rinse the short-grain sushi rice until the water runs clear.
Cook the rice with the water and let it rest covered for 10 minutes.
Fold the rice vinegar, granulated sugar and salt into the hot rice.
Cut the oshinko pickle into long thin strips.
Place a half sheet of nori on the mat and spread a thin layer of rice on it.
Arrange the oshinko strips in the center and roll tightly.
Cut the roll into 6 pieces with a wet sharp knife and place on serving plates.
Serve oshinko maki with soy sauce, wasabi and pickled ginger.
💡 Tip: Placing the daikon strips in the same direction as the rice reduces tearing when the roll is cut.
